The Langue de chat across the ocean
“Langue de chat” is the common name for cat’s tongue cookies in Japan.
I have always wondered why I find Japanese souvenir sweets being sold at foreign ports and airports when I travel. These souvenirs are rather local and small confectionaries like us, not big boys like Glico or Meiji. Some store in Hong Kong only sells such souvenirs. So it became my dream to sell our sweets overseas.
I wondered if our products could be sold here someday. was my first thought. The chance came across soon. One of my friends invited me to participate in the Hong Kong Food Expo at the Oita Prefecture booth. I was so excited and went to Hong Kong with high expectations to sell a lot of our products. The results were miserable. I got so many challenges, not purchase orders.
The following year, after solved challenges in my way, I went back to Hong Kong for revenge. The result was 360 cases of direct export orders! Now I have to find an ocean freight and figure out how to make an invoice and packing list to export a container load.
We started participating in exhibitions overseas, and again, we got harsh comments such as, “It doesn’t taste good” and “The contents are falling apart.
It was also around this time that tighter regulation on trans-fatty acids.
We have reviewed the ingredients, recipe, and process to overcome the quality issues. In addition, we design and made a special tray to prevent breakage from overseas transportation. As for trans-fatty acids, we found ingredients that can label zero trans-fatty acids per unit. As a result, the texture, balance of taste with the real chocolate, and total quality of the cookie became so much better.
We manufacture our Langue de chat in a dedicated facility for a safe product.
It is often said that Japanese sweets are delicious. Why? It is not generally known, but I have heard that there are only three types of flour in the world. In Japan, there are dozens of types of flour for different foods, such as for bread, cake, confectionery, and a variety of noodles that suits the food. The same is true for sugar. Also, Langue de chat making machines are not exported to overseas markets.
These fine-tuned ingredient varieties, choosing the right ingredients, and the technology makes made our made in Japan” Langue de chat ” so special.
I wish everyone in the world to enjoy these reasonable patissier level sweets.
